For the dressing, we just used lemon juice and olive oil—nothing fancy, just a nice balance of flavors.

Greek Red Cabbage Pomegranate Salad
Ingredients
- 150 g lettuce
- 100 g red cabbage
- 1 sour apple
- 1 small carrot
- seeds of 1 pomegranate- 80 g
- 1 tbsp olive oil
- juice of 1/2 a lemon
- 1/2 a tsp of salt
Instructions
- Begin by chopping or grating the cabbage and carrot using a food processor or a hand grater.
- Combine olive oil with lemon juice and set it aside. Rinse and dry the lettuce, then tear it into small pieces with your fingers.
- Finely dice the washed, unpeeled apple, reserving a quarter for garnish. Slice the remaining quarter.
- If you’re using a whole pomegranate, extract the seeds and reserve a quarter for garnish.
- Combine all the ingredients in a spacious salad bowl.
- Drizzle the olive oil and lemon dressing over the salad, add the salt, and gently mix.
- Finish by garnishing with the reserved pomegranate seeds and apple slices. Enjoy!
